this is stupid, there are certain foods in the world that don't? get moldy for a while. Come on people, think! Oil slows down bacteria growth and high salt concentrations can produce environments bacteria can not live in (not to mention drying out moisture). What do you think ship sailors did to their meat when they went on year long expeditions? They salted their meat so it could be preserved.
