There was a Chinese restaurant I used to go to in Vancouver called The Villa. Very dirty place but the food was pretty good. Like other Chinese restaurants in the area, they'd hang bbq pork and duck in the front window. One day one of the waitresses went to get some bbq meat and sneezed all over the stuff hanging there. And then she sneezed? on the meat a second time, aye! Don't think I ever went back again.

The point everyone is trying to make is that the food philosophy is wrong. There is no sense in carmelizing a creme brulee with a laser when a blow torch will do. Chefs like Heston Blumenthal and Ferran Adria use MG to twist a dish to either extract the most flavour or change the perception of a dish. He's? the guy who has a 80' TV but no cable. This is ridiculous! No doubt that it's overpriced? either! Molecular gastronomy is really cool and it could aid in the cooking experience. I really enjoy seeing things like this being incorporated in cooking, but this is taking it way too far. One of my favorites is from Molecule-R with balsamic spheres and mozzarella in a small, hollowed out tomato for instance. I just can't imagine a whole meal based only on this, though.
