This is the traditional recipe made in northern Mexico. Ingredient measurements should be followed exactly as shown in instructions; water quantity may vary depending on desired mixture texture. This recipe makes about 18 tortillas. 3 ½ cups of all-purpose flour 1 teaspoon of salt ½ teaspoon of baking powder 3.5 oz -- vegetable shortening (cut into very small pieces) 1 cup of very hot water

My Grandmother, used this exact recipe,? she used lard, I believe shortening came in later. I have a hard time believing the comments made here are by true Mexican people. The reason it was measured out is because my grandma never measured. so for people who are trying to pass down the tradition, I say Yay. Wow. I'm from west tx and I'm mexican American: tejana to be exact....my mom always taught me to be original and learn the old way... Never have I seen her really measure anything to this extremity ! We never let the masa(dough) sit either. It will naturally rise on its own if you put the right ingredients in it when it's on a griddle. We always shape the separated dough into "patties" not flat though and put a moist rag over them to keep the dough from getting hard due to air.? This lady looks

I just made these last night 4 dinner which was fajitas & they were so good I cut the recipe n half so I was worried that they wouldn't turn out right but they did . So so yummy ! Well seeing as how I grew up in a Hispanic house? hold where that was a common adage I do not see how that is racist. But more of a celebration of a diverse house hold that cooks fresh tortillas as a staple food. Most people would flip them with a spatula and never even think to flip them with their hands. Only some one who has had that tradition passed down would think to do it that way.

My thanks to you for taking the time to teach all of us how to make tortillas. I? will use your method. As far as having them go stale and then having to throw them out, I use a clip (or staple) to seal the bag and then I put the bag in my freezer. They keep very well for me. You could try this and see if it works for you. My daughter says it doesn't work and I am not sure why. I do use a chest freezer and she uses a side by side upright.

I just finished mine, but i should have read the comment on this video. I have made the damn 1/8 gap and after trying it, i prefer my tortillas thinner. everything is glued and my hinges are imbedded to make? it flush to the wood, so i will have to find a way to install an insert. That's the learning by doing process! cheers!

i made one small change. Instead? of a wing nut i used 2 nuts and tightened one against the other so it could not come undone. Install two nuts to proper tightness, then holding the outside one back the inside one off against the outside nut so the lock together. Works great.

Are you kidding me? :-D I'm from Texas. Mexican food is the staple of our diet here. We even made our own "Tex-Mex" You are absolutely correct about being able to "stomach it properly" When I was younger, no problem, but now.... I can eat it? just fine but will pay dearly for it later. I just have to go lighter on the hot peppers and chili powder! :-D

Yeah, my press produces tortillas that are a bit thick. I'd like to make? some sort of insert to allow for thinner ones. I'm not sure if you need saran wrap. I'll bet flour would work fine. The advantage to plastic is that is makes removing the pressed tortillas easier.

I've always used a rolling pin for mine. Been thinking about using a press lately - Do you have to use saran wrap on it? Couldn't you lightly coat it with flour instead? I'd use a much thinner shim - not paperthin, but just under 2mm would be good IMO. Also, I think a small piece of wood shim at the closing end would be? a good idea, so you don't press the masa too much at one end.

Thanks for going into such great detail. You should teach Wood Shop at a High School.? Love the fact you rounded the edges and stained. One problem though. I noticed once you put the hinges on, the side with the handle base lay lower than the side with the hinges. Seems like it would make you tortillas thicker on one side than the other. Great video though.

Hi, very nice videos and recipies. I find that some of the recipies seem to be rushed towards the end, in this case we didn't get to see what you mean by pressing down on the tortilla with the damp cloth. And in the tamale recipie we never got to see what it looks like cooked, etc. We never got to see? the finished eggplany parmesean either. You may want to consider this when making your next video.
