As I was begun to watch the? video I was getting irritated by his voice and psuedo stammerred delivery but by the end of the video I had turned into a fan. His use of 'my friends' so profusely won me over that I almost want to look him up and send him a friend's request on Facebook. Good job chef. May I suggest that you put a link to glossary of ingredients for ever video in your video description. All you videos tends to skip over ingredients list very quickly. Cheers.

I know that many people don't like? the slimy texture that bhindi give but, personally, I love it. I was wondering if there were other recipes I could make that were slimy. There is a vegetable that is similar to small potatoes and tastes like a coarser textured slimy potato (I think it is called arrawi in North India). You mentioned 2 tomatoes in the recipe and I guessed the rest based on what the quantity looked like in your video. I love the addition of the measuring spoons! First time watching this site i like it but i wish the chef was more specific with? the measurement . I have no idea hw much uru dhal he used n how much water he needed. because for some one who never tried it, it would be difficult to get a good mixture just by assuming the amount we need. Hi chef, I made the irani onion samosas for a party following your recipe? verbatim. I did a trial batch of 6 samosas a few days before the party and that was a success. I was worried if the raw onion filling would get cooked while frying. It got cooked nicely after frying and tasted so yumm! The only tip I have is that do fry the samosas twice;makes all the difference in the crispy shell. At the party, they were loved by one and all, the one dish that just flew off the table. Thanks a ton, chef!

You don't need to use egg. Egg is basically 2 things. Fat and binding. Instead of egg if you want less dry and more moist rich kebab, just add 2 tablespoons of butter or ghee.? If you want binding effect of egg, you can substitute with bread crumbs.

Khoyaa is made with milk.....U can make it with Ricotta Cheese, just add 2 pots of ricotta cheese in 4 teaspoon of ghee in a non stick pan and just stirr until it turns into granules, it usually takes 20 min atleast...constantly stirr it....it is great. I am in UK and here u cant buy? khoyaa. I tried and it turned out great. I hope that helps, let me know if make it. thanks.

You should look for a color change from yellow to a pale creamy color as you pour in the hot oil little by little, when all the besan mixture has changed to that? lighter color, then pour it into a deep pan like a metal lasagna dish. Outside will stay the lighter color, interior will turn brown. DON'T USE GLASS/PYREX, it may heat shock and break.

Everything in the video was so clear until the end - where vahchef says.. remove it from the stove when there is a change of color - did anyone notice a clear change of color (the point at which you switch off the stove and? pour the mix into the tray?) I wasnt entirely sure when that change of color clearly occured.. I tried this now and waiting for 10 mins to cool down... but am afraid If i took it out too soon! Fingers crossed

You are Amazing chef, you know I alawys wondered how can I get the holes in the Mysore pak, now? I have learnt it so well from you. I always added a melted ghee not a hot oil like you did little by littlt, now I learnt the secret. I can't wait to make this Mysore pak. I will let you know how they come out.
